Oatmeal Pancakes

These pancakes come out tasting buttery delicious. A little more baking powder will make a fluffier pancake.

Ingredients

  • 3 cups Rolled Oats
  • 7 teaspoons baking powder
  • 1 teaspoons salt
  • 2 tablespoon white sugar (feel free to sub in another sweetener)
  • 2 1/2 cups Plant Protein (can we really call this milk?) Have you tried ripple milk?
  • 2 3.2 oz packets of applesauce (If you don’t have that feel free to sub in 1/2 cup of applesauce) I use these convenient gogo squeez pounches
  • 1/3 cup canola oil

Directions

  1. Preheat griddle or pan to 375°F
  2. Using a food processor grind oats, baking powder, salt, and sugar to a flour like consistency. (This should take roughly 5 minutes of running)
  3. In a large bowl mix, plant protein (milk), applesauce, canola oil.
  4. Mix everything together until lumps are gone, but don’t mix too much!
  5. Using a 1/3 cup measure, scoop batter onto griddle/pan.
  6. You’ll find these take a little longer to be flippable than your standard flour based pancakes. Don’t flip them too early.
